A decadent dessert turned into a nutritious breakfast. Raspberry cheesecake overnight oats are made with protein-rich Greek yogurt, fresh raspberries, vanilla and the perfect touch of sweetness for the ultimate breakfast treat.I have always been and forever will be a morning person. The idea of a fresh start to the day combined with a hot cup of coffee is just so comforting to me. I usually always start my mornings with a workout followed by a hearty breakfast, coffee (x2) and some time to catch up on emails and blog-related work. I refer to it as my “zen time” because I do my best work with my utmost mental clarity first thing in the morning.
I'm also a firm believer in breakfast being the most important meal of the day. A nutritious breakfast can truly set the tone for a positive, productive day filled with other healthy decisions that feel effortless.I go through phases with breakfast favorites on an almost weekly basis. Some weeks I'm all about the savory options: avocado toast, eggs and turkey bacon, or breakfast hashes. Other weeks, my sweet tooth takes over and the only options on my radar are oats, protein pancakes or whole grain French toast.
Though I have a strong feeling these oats will stay on my 'favorites' list for a record amount of time. I mean, what's not to love about overnight oats in general? The chew, the ease, the flavor change up. Everything about them just speaks to my breakfast-loving soul.
So now multiply that love times infinity and that's precisely how I feel about these raspberry CHEESECAKE oats. And trust me, I don't use the word 'cheesecake' lightly. Between their ultra creamy, luscious texture to the invigorating taste of fresh raspberries and lemon, they 100% actually taste like the real thing. You may even find yourself sneaking a few bites for dessert, too.
But I wouldn't know anything about that. 😉I've been eating these oats straight out of the jar all week for breakfast and snacks. Their cold, creaminess is exceptionally appealing with this HOT sticky weather and they've even been satisfying my constant craving for fro-yo.
I like to top them with crushed graham crackers to mimic traditional cheesecake crust and to add a delectable crunch. You could also add a dollop of cool whip or Greek yogurt, extra lemon zest or fresh mint for extra decadence.
For almost 7 grams of fiber and 9 grams of protein, cheesecake has never tasted this good.
Raspberry Cheesecake Overnight Oats
Ingredients
- 2 tablespoon reduced fat cream cheese softened
- ¼ cup 0% fat vanilla Greek yogurt
- 2 tablespoon honey
- ½ cup fresh raspberries
- 1 cup old fashioned oats
- 1 cup unsweetened almond or cashew milk
- ¼ teaspoon vanilla extract
- Zest of ½ lemon
- ⅛ teaspoon sea salt
- Optional topping: crushed graham crackers
Instructions
- In a small bowl, whisk cream cheese, yogurt and honey until well-combined. Add raspberries and use a fork to gently mash up.
- Transfer to a jar or tupperware container and add oats, milk, vanilla, lemon and sea salt. Mix well to combine. Cover and refrigerate overnight or at least 5-6 hours.
- Top with additional fresh raspberries and graham cracker crumbs. Enjoy!
