Choco-Peanut Butter Banana Protein Pancakes

Healthy dessert for breakfast? Sign. Me. Up! These pancakes are truly out of this world. As is anything that combines chocolate and peanut butter, if you ask me ;). I’d even go as far as to say this is my favorite pancake recipe. What makes them even better? They are gluten-free, packed with protein and have no added sugar. You can enjoy a guilt-free breakfast that will you keep satisfied well into the morning.

Choco-Peanut Butter Banana Protein Pancakes

Makes 1 serving of 4 medium sized pancakes

Pancake Base Ingredients

  • 1/2 small ripe banana, mashed
  • 1 scoop chocolate protein powder
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp PB2 (powdered peanut butter)
  • 1 tbsp coconut flour
  • 1/3 cup liquid egg whites
  • 1/3 cup unsweetened almond milk
  • 1/2 tsp baking powder
Filling Ingredients
  • 2 tbsp 0% Greek yogurt
  • 1 tbsp PB2
  • 2 tbsp unsweetened almond milk
  • 1/2 tsp stevia (or 1 packet)

Directions

  • Mash 1/2 banana with a fork until pureed consistency
  • Mix in remaining base ingredients and whisk with a hand mixer
  • Spray a skillet or grill pan with non-stick cooking spray and heat stove-top over medium-heat. Spoon mixture onto heated pan into ~4 medium sized pancakes
  • Heat 2-3 minutes, or until bubbly, flip and heat other side an additional 2-3 minutes
  • In the meantime, whisk together filling ingredients with hand mixer
  • Once pancakes are done, spoon filling onto each layer and stack accordingly
  • Optional toppings: remaining 1/2 banana slices and/or chocolate chips (I use Enjoy Life)

    The nutrition facts for this seem very off. How can there possibly be 53g of carbohydrates when basically the only carbs are coming from half a small banana? Which has nowhere near that amount of sugar or carbs? Even if a higher carbohydrates protein powder is used I don’t see that being close to accurate.

      Hey Jason –
      The Isogenix protein powder I used had 12 grams of carbs per serving. Also, the nutrition facts for this recipe included the toppings, which were the remaining half of the banana as well as chocolate chips. I did state the total tally included the toppings, but I understand how that may have been overlooked by readers, as I am sure you are not the only one who questioned where the additional carbs came from. I have adjusted the nutrition facts of the recipe to include only the ingredients for the pancakes themselves, excluding the additional toppings.

      It’s mostly from the baking powder, unfortunately… though some comes from the protein powder and egg whites.
