Sweet Potato Brownies
These irresistibly fudgy (hidden fiber!) brownies are deeply chocolatey and made with wholesome ingredients like almond butter and mashed sweet potato. They’re a feel-good sweet treat that tastes every bit as decadent as the classic.
What to look for: Choose firm sweet potatoes with smooth skin and no soft spots, wrinkled skin, or signs of sprouting.
How to store: It’s best to store sweet potatoes in a cool, dry, well-ventilated space (such as a pantry). Keep them away from direct sunlight and heat from the stovetop, if possible.
Refrigerating sweet potatoes is NOT necessary and can actually negatively affect their texture and flavor.
You also want to avoid washing them until you’re ready to cook them. (Excess moisture can promote spoilage.)
How long they last: Whole, uncooked sweet potatoes can typically last up to 2 weeks when stored properly. Once cooked, refrigerate them in an airtight container and enjoy within 3 to 4 days.
Health Benefits of Sweet Potatoes
Rich in antioxidants. Orange-flesh sweet potatoes are high in beta-carotene, a powerful antioxidant the converts to vitamin A. Vitamin A plays an important role in eye health, immune function, and skin health.
Support gut and heart health. Sweet potatoes are a fabulous source of fiber, which promotes healthy digestion and helps nourish beneficial gut bacteria. They’re also high in potassium, which supports healthy blood pressure and proper muscle and nerve function.
Provide sustained energy. As a source of complex carbohydrates, sweet potatoes provide energy to help fuel your day. Their fiber content also helps slow digestion and promote feelings of satiety.
