Most of these dinners are complete meals on their own, however if you need to round things out, these are some of my favorite veggie sides to add:
Sautéed Broccoli. Our go-to veggie side that we make at least once a week. Pairs well with just about any entree or protein!
Cucumber Salad. Any of these cucumber salad recipes are simple enough for weeknights, yet incredibly flavorful.
Parmesan Roasted Cauliflower. The veggie side dish with the most stellar ratings on my site! It’s truly addictive and known to convert even the biggest veggie skeptics.
Carrot Salad. Crunchy, colorful, and bursting with fresh flavor, this is a no-cook, toss-together salad I would happily eat on repeat.
Sautéed Zucchini. You can’t beat this garlic-herb zucchini recipe during the summer months.
Tips for Making Weeknight Dinners Easier
Prep ingredients (not entire meals). Complete small tasks such as chopping vegetables, blending sauces, cooking grains, and even washing greens in advance to give you head start on dinner.
Keep a few flavor boosters on hand. A fabulous sauce, dressing, chili crisp, or pesto can instantly elevate even the most basic meals. I personally love keeping a batch of my Copycat Chipotle Vinaigrette on hand to use as a marinade or dressing.
Lean on convenience items. Frozen veggies, canned beans, steam-in-bag grains, rotisserie chicken, and pre-cut veggies can make throwing together a healthy dinner considerably easier.
Cook once, eat twice. When a recipe keeps well, make enough to enjoy for leftovers.
Choose recipes with built-in veggies. This eliminates the need for a veggie side or salad, and creates fewer dishes to wash. Sheet pan meals, bowls, and pastas are ideal for tossing in extra veggies!
