Ingredients

  • 1/2 medium ripe avocado
  • 1/2 cup plain full-fat Greek yogurt
  • 1/4 cup mayonnaise (I use avocado oil-based mayo, such as Chosen Foods brand)
  • 3/4 cup fresh parsley leaves
  • 1/2 cup fresh basil leaves
  • 2 heaping Tbsp. chopped fresh tarragon
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. anchovy paste
  • 1/2 tsp. cracked black pepper
  • 1/2 tsp. kosher salt

Instructions

  • To the bowl of a food processor, combine the avocado, yogurt, and mayonnaise; blend until smooth. Add herbs, lemon juice, anchovy paste, salt, and pepper; blend until mostly smooth and creamy, stopping to scrape down the sides as needed.
    Empty dip into a serving bowl and place on a serving platter with veggies, pita, and/or crackers.

Notes

Serve with raw veggies, crackers, pita chips, or crusty bread. Dip can also be used as a spread on sandwiches, wraps or burgers!
*If making vegan, use white miso paste in place of anchovy paste.
