- 1 Tbsp. ground flaxseed
- 1 cup coconut sugar
- 3/4 cup buckwheat flour
- 1/4 cup quality cocoa powder
- 2 tsp. ground coffee or espresso
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- 1/2 cup melted and cooled coconut oil
- 1/2 cup unsweetened almond or coconut milk
- 1 tsp. vanilla extract
- Optional topping: 1/3 cup chopped walnuts or chocolate chips coarse salt
Preheat oven to 350°F and grease an 8x8 baking dish lined with parchment paper.
Prepare flax egg by combining flaxseeds with 2 Tbsp. warm water in a small bowl; let stand 5 minutes, until mixture becomes gelatinous.
Meanwhile, combine sugar, buckwheat flour, cocoa powder, ground coffee, baking soda, and salt in a large bowl; stir with a whisk.
In a separate bowl, combine coconut oil, almond or coconut milk, vanilla extract, and flax egg; stir with a whisk and immediately pour mixture into dry ingredients. Stir until just combined.
Pour mixture into prepared baking pan and smooth top using the back of a spoon or a rubber spatula (grease with cooking spray for ease of smoothing). Sprinkle walnuts (or chocolate chips) overtop and bake for 25 to 29 minutes, or until knife inserted into the middle comes out with just a few crumbs attached. Remove from oven and sprinkle with coarse salt, if desired. Let cool completely before removing from pan and cutting into 12 squares.
