Equipment

  • Blender or immersion blender

Ingredients

  • 1/2 cup avocado oil (or grapeseed oil)
  • 1/4 cup red wine vinegar
  • 2 Tbsp. honey
  • 1 chipotle chili pepper* (from a can of chipotle peppers in adobo sauce)
  • 1 garlic clove
  • 1/2 tsp. dried oregano
  • 1/2 tsp. ground cumin
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper

Instructions

  • Combine all dressing ingredients in a blender or immersion blender cup. Blend until smooth. Taste and adjust seasonings if needed.
  • Use immediately on burrito bowls, tacos, or salads, or refrigerate and enjoy for up to 2 weeks.

Notes

*As written, the dressing is a tad spicy. If you’re sensitive to spice, only use half of a chipotle chili pepper.
