Key Lime Pie Energy Bites

Key Lime Pie Energy Bites are a healthy, fueling treat that taste just like a slice of pie. Gluten free, vegan, and made in just 10 minutes, these key lime energy balls will become a snacking staple.

Ingredients

  • 1 cup raw cashews
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 6 pitted Medjool dates
  • 1/4 cup hemp seeds
  • 2 Tbsp. maple syrup
  • Zest of 2 limes, plus 2 Tbsp. fresh lime juice
  • 1 tsp. vanilla extract
  • 1/4 tsp. sea salt
  • Optional for coating: graham cracker crumbs or additional shredded coconut

Instructions

  • In the bowl of a food processor, combine cashews, oats, and shredded coconut; blend until finely ground.
    Add dates, hemp seeds, maple syrup, lime zest and juice, vanilla, and salt; blend until the mixture comes together and forms a dough-like ball.
  • Use a small cookie scoop or Tablespoon to measure out 12 portions and roll into balls. If desired, roll balls in graham cracker crumbs or shredded coconut for extra decadence.

Notes

Store in an airtight container in the refrigerator for up to 10 days, or freezer up to 3 months. If frozen, leave them out at room temperature for 10 minutes before eating.
