Banana Bread Overnight Oats

Ingredients

  • 1 small (or 1/2 large) extra-ripe banana
  • 1 cup old-fashioned rolled oats
  • 1 1/4 cups Silk® Original Oatmilk
  • 2 tsp. chia seeds
  • 2 tsp. maple syrup
  • 3/4 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • Pinch of nutmeg
  • 2 Tbsp. plant-based protein powder or collagen peptides
  • 2 Tbsp. finely chopped walnuts
  • 1 Tbsp. mini chocolate chips (optional)

Instructions

  • Peel banana and place in a bowl. Use a fork or a potato masher to thoroughly mash banana until it appears smooth and pureed. Transfer banana to a mason jar or glass jar with a fitted lid.
    Add oats, Silk® Original Oatmilk, chia seeds, maple syrup, vanilla, cinnamon, salt, nutmeg, and protein powder and/or collagen; stir well to combine. Stir in the chopped walnuts and mini chocolate chips. 
  • Cover and refrigerate oats overnight (or at least 6 to 8 hours). Uncover, add toppings of choice, and enjoy!

Notes

Store in the refrigerator for up to 2 days.
