In the height of summer I find few things more satisfying than a cold, refreshing smoothie. Especially in Florida when every day is an absolute scorcher and you start perspiring almost immediately as soon as you step outside. Honestly, I can’t remember the last time I actually did my hair. I’m all about that ponytail and messy bun life.
This is the perfect post-workout beverage, breakfast on-the-go or midday snack. You can just taste how nutritious it is with every sip. You can also add a scoop of protein powder or serving of Greek yogurt to increase the protein content.I also love how aesthetically appealing it is. It blends into a beautiful green color with specs of deep purple from the figs. The pineapple adds just the right dose of sweetness so it doesn’t require any additional sweeteners. The sweetness from the fruit also cuts the bitterness of the kale so you can hardly taste it. You could also sub the kale for spinach if you’d prefer.
One thing I’m absolutely loving for smoothies is Almond Breeze Unsweetened Vanilla Almond Coconut Milk. For only 45 calories a serving, it really enhances the creaminess of smoothies and adds a subtle vanilla coconut flavor. I couldn’t choose a better match for this smoothie, in particular. It’s also fortified with a considerate amount of calcium, rounding out a very nutrient-dense alternative to cows milk.
