SMOKED SALMON DEVILED EGGS (makes 24)
🔸1 carton Happy Egg Heritage Breed Eggs
🔸4 oz. smoked salmon
🔸1/3 cup mayonnaise
🔸2 tsp. prepared horseradish (I use extra hot)
🔸2 Tbsp. chopped fresh chives, plus more for garnish
🔸1/2 tsp. cracked black pepper

🔸Carefully add eggs to a large pot of boiling water. Reduce to a simmer; cook eggs 10 minutes. Drain and transfer to a bowl of ice water; let sit until cool enough to handle. Peel.
🔸Meanwhile, combine smoked salmon, mayo, and horseradish in a food processor; pulse until mixture forms a chunky paste.
🔸Halve eggs lengthwise. Scoop yolks into mayo mixture and place whites on a serving platter. Mash yolks into salmon mixture; stir in chives and black pepper. Season with salt, if needed.
🔸Spoon or pipe the yolk mixture back into the egg whites. Garnish with more chives and black pepper, if desired.
