Every good summer outing comes with a great summer snack!
Summer in Florida means highs in the 90’s on the daily. This summer has been an absolute scorcher so far and we haven’t even hit the worst of it yet. When it comes to planning any kind of outdoor activity, I always try to think of nutritious snacks that will withstand the heat. Unless a hefty cooler is in the equation, this typically means no perishables, chocolate chips or chocolate-coated candy. Enter: Tropical Trail Mix.
It’s sweet, salty, crunchy, chewy and all things delicious. It packs the perfect dose of healthy fat, protein and natural sugar to keep you energized during your favorite outdoor activities. Whether it’s biking, hiking, kayaking or simply enjoying a day at the beach, you can count on this trail mix to be your snack-time savior!
Blue Diamond’s Roasted Salted Almonds are mixed with golden raisins, banana chips, dried pineapple, roasted pepitas (pumpkin seeds) and unsweetened coconut flakes. You could improvise to your liking by subbing dried mango slices for the pineapple or craisins for the golden raisins.
I absolutely loved this combination and thought all the ingredients worked in perfect harmony. You can whip up this trail mix in less than 5 minutes, pack it in a bag or mason jar and be on your way.
I decided to bring this mix on my first kayaking adventure this weekend. Living close to the water in St. Petersburg, we are lucky enough to have a gorgeous 3,000+ acre nature preserve called Weedon Island that is practically right around the corner. Among the many impressive features of this coastal system is a four mile paddling trail for kayaks, paddle boards or small canoes. This trail meanders through mangroves and seagrass flats, between islands of the preserve and along the edge of Tampa Bay. Despite getting rained on a few times, running our kayak into mangrove trees that were home to thousands of pinching crabs, and having to get out and push our kayak through low-tide areas, all-in-all, it was an awesome adventure and ONE HECK of a workout!
Forewarning: paddling for 3+ hours not only makes your arms feel like wet spaghetti noodles, but it also leads to ravenous hunger. So much so that you may start imagining how good those pinching crabs would taste in a crab cake sandwich later…

Tropical Trail Mix
- 1/2 cup Blue Diamond Roasted Salted Almonds
- 1/2 cup dried pineapple chunks
- 1 cup banana chips
- 1/4 cup golden raisins
- 1/4 cup unsweetened coconut flakes
- 2 tbsp roasted pepitas (pumpkin seeds)
- Combine all ingredients and store in a mason jar, tupperware container or Ziploc bag for up to 4 weeks.
