Crisp apples, dried berries, tangy goat cheese, walnuts, bacon and protein-rich quinoa on a bed of fresh greens tossed in a light, refreshing lemon agave dressing. A nutrient-packed salad that is every bit as tasty as it is healthy.
Say hello to my new favorite salad.
I know that’s definitely not the first time I’ve said that, nor will it likely be the last. But for now, holy smokes is this salad incredibly flavorful and loaded with so many delicious toppings. And If you’re a texture person like me, this salad will quickly become your favorite too!
So tell me, are you more of a fruit/nut/soft cheese kind of salad person or a vegetable/hard cheese/crouton kind of salad person? I typically gravitate towards the latter, but this salad is hands-down an exception. The toppings compliment each other so perfectly.
And then we have a lemon agave dressing to cover the entire thing in more flavor. Does it get any better??
To optimize the freshness of this salad, all of the toppings are on a crisp bed of Organic Girl greens. If you’re not familiar with Organic Girl produce, they are a small company based out of California who are extremely passionate about premium quality and fresh flavor. I’ve always adored their salad blends, with some of my every day favorites being i heart baby kale and their newest additions – peppergreens and sweet pea blends.
And what is perhaps even more exciting than this salad is the fact that Organic Girl’s newest produce-based products are now available at Whole Foods, Publix (for my fellow south east dwellers!) and other local retailers.
This includes their two new salad blends as well as their line of salad love vinaigrettes. These dressings are organic, non-GMO, gluten-free and packed with healthy fats, no artificial ingredients and minimal sodium. Being someone that typically sticks to homemade dressings because of how many additives and concentrates are added to store-bought dressings, this was music to my ears.
I truly didn’t know a bottled dressing could taste THIS fresh and delicious. I am 100% hooked.
The lemon agave and kale parmesan are obviously the perfect matches for salads, but I found that the white cheddar dressing was actually quite versatile. I drizzled it on top of homemade bbq chicken flatbread and dipped both breaded chicken tenders and buffalo cauliflower in it. Insanely delicious!!!
- 2 generous cups of Organic Girl greens - I used the sweet pea blend
- ½ cup diced apples
- ¼ cup cooked quinoa
- 2 slices of cooked turkey bacon, chopped
- 2 tbsp dried berries - I used a mix of craisins and golden raisins
- 1 tbsp goat cheese
- 1 tbsp chopped walnuts
- 2 tbsp Organic Girl lemon agave vinaigrette
- Combine all ingredients in a large bowl or plate. Toss to evenly coat ingredients with dressing. Serve!
