Recipe type: Dessert, Snack
Serves: 10 bars
  • **Base**
  • 1 cup raw cashews
  • ½ cup raw peanuts
  • 6 pitted Medjool dates
  • ¼ tsp. sea salt
  • **Filling**
  • 6 pitted Medjool dates
  • ½ cup natural peanut butter
  • 4 Tbsp. water
  • Pinch of sea salt
  • **Topping**
  • ⅓ cup raw peanuts
  • 1 oz. vegan, dark, or semi-sweet chocolate, roughly chopped
  • Pinch of sea salt
  1. Create the base by combining cashews, peanuts, dates, and salt in a food processor. Blend until ingredients begin to form a ball (refer to photo above). Transfer to a loaf pan lined with parchment paper. Press mixture down in a single layer, using the back of a measuring cup or spoon to help press down and condense mixture. Place in the freezer.
  2. Create filling by combining dates, peanut butter, and salt in a food processor; blend mixture, adding water in 1 Tablespoon increments, until smooth. Remove pan from the freezer and spread filling mixture evenly over base mixture.
  3. Create topping by placing chocolate in a microwave-safe bowl and microwaving for 30-second increments, stirring often, until melted and smooth (about 2 minutes total).
  4. Sprinkle peanuts on top of date filling and drizzle melted chocolate overtop. Sprinkle with sea salt, if desired.
  5. Freeze for 1 hour. Slice into 10 bars.
To store, wrap tightly, and these bars will keep up to a month in the freezer
