  • 1 cup buckwheat flour
  • 2 tbsp coconut sugar (or granulated sweetener of choice)
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 cup Coconutmilk Holiday Nog (or Almond Nog)
  • 2 eggs
  • ½ tsp vanilla extract
  1. Preheat waffle maker and generously coat with nonstick cooking spray.
  2. In a large bowl, combine dry ingredients: flour, sugar, baking powder, baking soda, and cinnamon. Whisk to combine.
  3. In a separate smaller bowl, combine nog, eggs, and vanilla. Stir with a whisk.
  4. Pour wet ingredients into dry. Stir until just combined.
  5. Pour batter onto the hot waffle iron plates, close the waffle iron and cook until the waffles are barely letting off steam and they are lightly crisp to the touch (time will vary for waffle irons).
  6. Carefully lift waffle out of the waffle iron and serve immediately or place in a 200 degree F oven to keep warm for up to 30 minutes. Repeat with remaining batter. Serve with toppings of choice.
