Similar in taste and texture to a KIND bar, these dark chocolate cherry chia almond bars are an incredibly delicious and nutritious snack. They are simple to make, freezer-friendly and very customizable!
  • 1 cup of roasted unsalted almonds, roughly chopped
  • ½ cup old fashioned oats
  • ½ cup dried cherries (I found mine at Trader Joe's)
  • ⅓ cup honey
  • ¼ cup almond meal
  • 1.5 ounces good quality dark chocolate, finely chopped (I used 86% dark)
  • 1 tbsp chia seeds (optional)
  • Pinch of sea salt (~1/4 tsp)
  1. Preheat oven to 325 degrees F. Line an 8x8 baking pan with parchment paper and lightly grease with non-stick spray.
  2. In a large bowl, add all ingredients and mix throughly to combine.
  3. Pour mixture into prepared baking pan, spread evenly, and push down with your hands to thoroughly compact ingredients.
  4. Bake for 20 minutes. Remove from oven and let cool completely. Place in refrigerator for 45 mins-1 hour to set. Slice into 8 bars. Serve!
Best if left refrigerated to stay nice and crunchy!
To make vegan: sub honey for brown rice syrup. Sub dark chocolate for cacao nibs.
To assure these bars are gluten-free (if necessary), use certified gluten-free oats (Bob's Red Mill)
