It hasn’t even been that cold here this week but I just couldn’t miss out on obligatory soup weather. I feel for all of you northerners. So much that I wanted to share this soul warming soup with you. Healthy comfort food at its finest!
Who doesn’t love slow-cooker recipes? Especially during busy work weeks. Not only do you come home at the end of the day to dinner already prepared, but you are greeted with the most amazing aromas floating in the air. Ahh, crock-pots are just so romantic.
I could not possibly pack more health into this soup.
That’s not true. I’d likely find a way. But even I was taken aback by how low in fat and high in fiber this soup ended up being. No cooking oil. No refined grains. No dairy. Just fresh produce, legumes and a kick of spice.
If you’re feeling meaty, I would recommend adding in some ground spicy Italian turkey sausage. However, lentils are relatively high in protein themselves so you may not even miss the meat.
Speaking of spice, I added 1/2 tsp of red pepper flakes to give it a little kick. It did not make the soup spicy at all. At least not in my book. Just revved up the flavor a bit. However, you could add more (or none at all) depending on how spicy you’re feeling and how cold it is outside.
Nothing better than being warmed up from the inside out with a delicious, nutritious homemade soup.
Slow-Cooker Curried Vegetable Lentil Soup
Makes ~eight 1 1/2 cup servings
- 2 cups uncooked lentils
- 1 can Garbanzo beans/chick peas, drained and rinsed
- 1 10 oz can petite diced tomatoes
- 1 green pepper, finely chopped
- 1 sweet onion, finely chopped
- 2 cloves garlic, finely chopped
- 4 large carrots, chopped
- 3 1/2 cups vegetable broth
- 3 1/2 cups water
- 2 tbsp chopped fresh basil
- 1 tbsp curry powder
- 1 tsp coriander
- 1/2 tsp red pepper flakes (optional)
- Add all ingredients to slow-c0oker. Cook on low for 8-9 hours. Store leftovers in an air-tight container refrigerated for up to 5 days.
